Mock Chicken Salad
from Paula Eakins cookbook
Vegetarian Cooking Made E-Z

1 (16ounce) package firm tofu
      (water packed)
1 large stalk celery, diced
2 scallions, minced
1 tsp. garlic powder
1/2 cup soy mayonnaise
1 tbsp. low-sodium soy sauce
1 tbsp. fresh lemon juice
1/4 tsp. turmeric powder

Freeze tofu overnight, then thaw and press out water with paper towel, this will give a chicken-like texture.  In a medium sized bowl, crumble tofu into small peices.  Add celery and scallions.

In a small bowl, mix together mayonnaise, lemon juice, soy sauce, garlic powder and turmeric.  Add to tofu mixture and mix well.  Serves six.

Note:  Serve the mock chicken salad on whole wheat bread, or in pita bread pocket halves with curly leaf lettuce and a sliced tomato.  For a special treat take a wicker basket and place a colorful cloth napkin on the bottom, then lay the pita bread halves on it.  Pretty and delicious!
